Cut all mango flesh off the seed
Mash the Banana and mango together in a big bowl
Beat each egg then add it one at a time to the bowl mixing it into the fruit mixture
Add the vanilla and beat it with fork
Melt the margarine and add it to the wet ingredients
Mix dry and wet
Add the wet items all at once to the dry mixture and mix it together with a spoon until it is all combined. Do not over mix once the flour disappears that is it.
Using an ice-cream scoop put the muffins into lined muffin trays. I made 30 muffins and one loaf or you can make 40 muffins
Bake at 400 for 15mins for muffins and 30mins for the loaf.
