Roast bake

I modified the recipe from Naparima girls cookbook since my children do not like coconut bake. I either make 2 round bakes or 8 mini bakes. Easy recipe for the morning if we have run out of bread. It tastes great with cheese or jam.

Ingredients
  

  • 4 cups all-purpose flour can also substitute one cup of oat flour or wholewheat flour for the white
  • 4 tsp baking powder
  • cups milk approx
  • ½ tsp salt
  • 2 ozs margarine can also use butter. I use up to four ozs dependent on how I feel
  • 1 tsp brown sugar The original receipe did not call for this but I like it
  • 1 tsp oil You can use any oil I like coconut oil

Instructions
 

  • Pre-heat oven to anywhere between 375 to 400
  • Combine flour salt and baking powder. I don't bother to sift but you can if you wish. Cut up the margarine in small pieces and rub it in to the mixture with the tips of your fingers. This takes the longest, approx 4 to 5 mins.
  • Pour the milk in and make a dough. Use the tips of fingers first then lightly knead.
  • Cover the dough ball with a teaspoon of oil and cover it with a damp cloth. Let it rest from 30 mins to up to one hour.
  • Roll out two large bakes or 8 mini bakes. Poke a few holes in the top with a fork.
  • Brush with a little melted butter or margarine. Bake for 20 mins. You can brush again with melted butter when it comes out of the oven
