Mango Banana Chocolate Chip Muffins

If you have overripe mangos or bananas this is an excellent one to try

Ingredients
  

  • 3 Ripe Mangos Julie
  • 1 Ripe Banana
  • 3 ½ cups all-purpose flour
  • 1 cup Granulated sugar
  • ½ cup Brown Sugar
  • ½ tsp salt
  • 4 tsp baking powder
  • 1 cup margarine or butter melted
  • 4 large eggs
  • 4 tsp vanilla extract
  • ½ cup chocolate chips Not sure how much I just pour

Instructions
 

  • Pre heat the oven to 400 C

Dry ingredients

  • Mix all dry ingredients together, flour, baking powder, salt, white sugar, brown sugar. In one bowl
  • Add the chocolate chips to the flour and stir it to coat the chips

Wet ingredients

  • Cut all mango flesh off the seed
  • Mash the Banana and mango together in a big bowl
  • Beat each egg then add it one at a time to the bowl mixing it into the fruit mixture
  • Add the vanilla and beat it with fork
  • Melt the margarine and add it to the wet ingredients

Mix dry and wet

  • Add the wet items all at once to the dry mixture and mix it together with a spoon until it is all combined. Do not over mix once the flour disappears that is it.
  • Using an ice-cream scoop put the muffins into lined muffin trays. I made 30 muffins and one loaf or you can make 40 muffins
  • Bake at 400 for 15mins for muffins and 30mins for the loaf.
